Sesame Super Cookies

I am a little obsessed with Go Raw’s amazing super cookies. It’s getting to the point where I can’t sit on the couch without annoying my husband with my constant crunching. These cookies aren’t cheap, so I decided to try making them on my own.

This recipe is just for the basic cookie, so definitely try adding your own favorite flavors. I made lemon & cacao.

Sesame Super Cookies

3/4 cup shredded coconut
1/2 cup sprouted sesame seeds*
4 medjool dates, pitted
1 tbsp water
1/8 teaspoon salt

Place all ingredients in the food processor and blend until combined and there are no chunks of dates.

Roll into a ball and press dough onto non-stick dehydrator sheet. Lay another sheet on top. Use a rolling-pin to flatten to 1/4″ or thinner.

Dehydrate at 105° F for about 6 hours or until the top is dry.

Flip over and score into pieces. Dehydrate for another 6 hours or until crispy and cracker like.

Flavour variations I tried
Lemon Cookies – Zest from 1 lemon
Chocolate Cookies – 1 tbsp raw cacao powder

*soaked in water overnight

    I am wondering if there is a way to make these low-carb. I could use less dates, but will they be too dry? Any thoughts?

    Also, I’d love to figure out a savory recipe too. Interested in your thoughts!

    I do not have a dehyrdater. Do you have oven drying directions? (My wallet & husband would both appreciate me making my own too :)

    Sweet! I almost bought some of these at the store, looked at the simple ingredients, and just bought them instead! This recipe is pretty much what I was going to do, but it’s nice to have some confirmation before I attempt it. HOpe it works! I love sending these cookies with my preschooler as a snack, so it will be awesome if we can whip them up ourselves and also come up with our own flavor combos.
